Usually when we hear the word “muffins”, we think about something sweet. Certainly, the savory variation of this baked good is not so popular, but I think it can be very tasty too.
This is one easy and quick recipe for savory muffins. They are high in protein, due to the chickpea flour, nuts, seeds and feta cheese. In addition, the muffins are also rich in flavor, thanks to the sun-dried tomatoes, olives and spices. This baked good is definitely the perfect go-to snack in the morning or the afternoon.
I love serving these savory muffins with a homemade yogurt dip and some fresh veggies.
Mediterranean Savory Protein-Muffins
Ingredients
- 2 Eggs
- 140 g Wheat flour
- 140 g Chickpea flour
- 100 ml Olive oil or other vegetable oil
- 300 g Yogurt
- 1 tsp Baking soda
- 100-150 g Feta Cheese
- 40 g Olives
- 50 g Sun-dried tomatoes, marinated or soaked
- 1 handful Seeds and nuts of choice, e.g. Sesame, Sunflower, Pumpkin seeds
- Rosemary, Basil, Oregano
- Pinch of salt and pepper
- 100 g Yogurt
- A few slices of Cucumber, diced
- A few slices of Red pepper, diced
- Some Spring onion or Leek, chopped
- Pinch of salt
Yogurt dip to serve:
Directions
- Preheat the oven to 190-200°C degrees, upper and lower heat.
- Add the baking soda to the yogurt and wait 1 minute, until bubbles start to appear on the surface.
- In a bowl, whisk the eggs with the olive oil and add the yogurt.
- Sift the flour and add it gradually to the mixture of liquid ingredients.
- Chop the olives and the sun-dried tomatoes.
- Add the spices, seeds and nuts, olives, sun-dried tomatoes and feta cheese to the savory muffins mixture. Mix everything together gently with a spatula.
- Fill each muffin tin to approximately ¾ of its capacity.
- Bake the muffins for 20-25 minutes until golden.
- After baking, allow the muffins to cool.
- Serve with the homemade yogurt dip and fresh vegetables like cherry tomatoes or rocket salad.
