Blueberry Muffins

My blueberry nights. There is a movie called like that, starring my favorite actor Jude Law. He is working in a coffee shop and one night he explains to a heartbroken girl that usually all cakes and pies are almost finished or completely gone until the end of the day, except the blueberry pie

Jeremy: At the end of every night cheesecake and apple pie are always completely gone. The peach cobbler and the chocolate mousse cake are nearly finished. But there’s always a whole blueberry pie left untouched.
Elizabeth: So what’s wrong with the blueberry pie?
Jeremy: There’s nothing wrong with the blueberry pie, it’s just people make other choices. You can’t blame the blueberry pie, it’s just … no one wants it.
[Jeremy reaches to throw out the pie. Elizabeth tries to stop him.]
Elizabeth: Wait! I want a piece.
Jeremy: With ice cream?
[Elizabeth nods and smiles.]

We can’t blame people for choosing the familiar and traditional. That doesn’t make the blueberry pie (or muffins 😉 ) worse than the chocolate cake. 

If you sometimes feel like a blueberry pie too and maybe think that something is wrong with you since people are always waiting in line for the chocolate cake but never for you – keep your head up! Be yourself and stay different. Sooner or later you will find people who will want a piece of blueberry pie with ice cream on top every day! Or in this case – a couple blueberry muffins with white chocolate 🙂

Blueberry Muffins with white chocolate

  • Servings: 15

Ingredients

  • 165 g Sugar
  • 125 g Butter, room temperature
  • 2 Eggs
  • 200 g Yoghurt
  • 1 tsp Vanilla extract
  • 2 tsp Cocoa
  • 300 g Flour
  • 2 tsp Baking powder
  • 1 tsp Baking soda
  • 250 g Blueberries
  • 100 g White chocolate

Directions

  1. Preheat the oven to 200°C degrees, upper and lower rack.
  2. In a deep bowl, beat the butter with the sugar until smooth.
  3. Add the eggs one at a time while beating.
  4. Add the yogurt and vanilla and beat until the ingredients are blended.
  5. Add the dry ingredients gradually and slowly mix.
  6. Divide the batter into muffin cups, filling them about 2/3.
  7. Place a piece of white chocolate in the middle of each muffin and cover with batter.
  8. Bake the muffins for about 25 minutes on medium in the oven (or until a toothpick inserted in the center comes out with just a few crumbs attached). Rotate the muffin tin halfway through baking.
  9. Then arrange them on a baking rack to cool evenly.
